no you don't. once you're in the Road of Sacrifices you can fight 2 bosses with according areas (actually 3 bosses, since one is in the way. but only 2 areas), both of which are mandatory
praetor doesn't know wtf he's talking about. Plenty of optional bosses you can skip past, and the mandatory ones are very flexible in the order you're allowed to fight them in. Game branches out a lot after the first boss.

first boss is Gundyr. after that, you
have to kill Vordt (you can also kill the Dancer at this point, but it's an excercise in tedium and near pointlessness that accomplishes nothing other than giving you souls and not having to fight the boss later). after that, you
have to kill the shitty wood boss (actually, you can skip the actual boss fight, but why would you do that as it's required for boss soul transfusions?), after that, you
have to kill both the deacons (and the pinwheel sage on the way), and the watchers. and after that, you
have to kill the big skellie dude. after that, you
have to kill Priest McSullivan. now i have 2 mandatory paths i can take. yay! so open and non-linear! so far, the only optional boss (and according area) has been the demon king.
now tell me, where is this plethora of choices? where does the game open up? where does the linearity stop? is it in the final fucking third? because as far as i can see, if i start the game again, i have to go through the exact same route in the exact same order (only i can skip the demon king and the whole area! wow! incredibly nonlinearity!) to get to where i am now.
now, unless i have waaay more than 50% of the game to finish until the end (please don't be a cunt and spoil it
) and it suddenly opens up with 5-6 areas after the 2 obvious mandatory paths i have to take, i'll stick with "the most linear Souls game to date" because so far that's been 100% true
