You cannot really comment on gameplay with that series which had from game to game vast changes. The only thing that stayed consistent was the world and atmosphere, at least starting from U4 and spinoffs excluded.

U4F gets everything wrong : gameplay, atmosphere, and probably some other things I can't yet fathom.

U7 didn't change anything, it only removed gameplay from the previous games (autopilot combat, lack of chargen, typing and karma meter, worthless magic). It has a better world, characters and story, and that's it.
