It's bloat upon bloat upon bloat and everything boils down to one strategy that gets +120% pop growth and +80% production vs. another strategy that gives +130% pop growth and +60% production.

Is this game fun for roleplaying various SF tropes in its current state? I recall back when I played that it always ended up being boring once you finished with the early game exploration.

They have filled out the midgame and end game with quite a bit more content so there are still many things to do after the early game. It is still not a challenge for the most part, like all paradox games once you understand the mechanics. But there is enough content to roleplay various flavors of SF civilization.

I think a lot of the content is locked behind DLCs, however. So it could be quite pricey at this point if you haven't played since release.

Nowadays i mostly RP around, help the ai with stuff max i can and to the quests, otherwise not much to do besides boring blob.
Are the quests, events and whatever varied enough so you don't end up doing the same each game?

There is enough variety for a few full games, but you will have seen most of it after probably about 4 or 5 games. What you haven't seen after that is usually stuff locked to specific origins you haven't tried yet. And some events have different options or outcomes depending on ideology or origin, so sometimes even stuff you have seen before will have something new.

depends, some are repetitive and u pretty much know what to do, others change depending on civic/type of government you playing.
