RPGs are all about unit/character progession. So after getting all the cool tools and abilities pretty often the game ends SHORTLY AFTER which can be a bit dissapointing or boring.

What are some good examples of role-playing games subverting this?

Isn't a common counter-complaint that games stop being challenging after you've reached max progress? If so maybe there should be other ways than pure RPG progression to keep players challenged. An obvious example might be extra hard enemies, requiring the player to use all his equipment and abilities in intelligent ways.

Not too sure about regular RPG's but most JRPG's have post-game/optional bosses or dungeons that tend to be more challenging than the main stories' finale.

DQ 9 also has a large postgame where all the previous games bosses are available and will keep scaling to your level up to maximum.

Easily my favorite DQ for the full-party-creation and build customization aspects

Dragon's Dogma (2012) has an entire, extended "post-game" section, after what the player might assume to be the climactic battle with the Dragon, permitting the PC and pawns to make use of advanced abilities against powerful enemies.

And that's without also considering the Bitterblack Isle expansion dungeon added by the Dark Arisen version (2013).

Yeah, these two come to mind to me personally. Felt like there was entire games added after the main story was done.

The only Pokémon games that comes close to GSC's postgame are the Unova games.

Dragon's Dogma: Dark Arisen for sure.

1. Short post-game story sequence. Some new enemy spawns on the map.
2. Repeatable mini-dungeon (Everfall) with a unique boss fight (Ur-Dragon) and some unique loot.
3. Repeatable mega-dungeon (Bitterblack Isle) with a lot of new enemies, new bosses, and new unique loot.

It's funny because despite having 10x more post-game content than other games, Dogma fans still complain that they didn't get enough.

I would be remiss not to mention the original Wild Arms because not only does it have plenty of post-game bosses, a post-game dungeon that is discovered in a really quite clever way, but it has all sorts of secret bosses spread throughout the game itself, it's like almost every dungeon has an optional big fight. Spell creation is pretty neat too.
