Alot of the greats have been mentioned, so I'll put two that I've always liked.

Emerald Isle them from M&M. This gives such an excellent feeling of excitement, wonder, and adventure. Could be in a Harry Potter film. Didn't care too much for the game, but love the track.

Baldur's Gate 2, Druid Grove theme. This is one from BG2 that never gets much love, but I adore it. Strongly evokes mystery, beauty, and melancholy.

The Dark Spire for DS (one of Japan's many Wizardry-ish blobbers) has one of my favorite soundtracks ever, with both FM and 8-bit versions (and it's just a great game)

Elder Scrolls: Arena has an amazing soundtrack on Roland Sound Canvas. I especially like the character generation theme.
Very reminiscent of the Conan the Barbarian movie.

Drakkhen has an absolutely fantastic Adlib/OPL soundtrack.
Extremely atmospheric! It's like something out of a John Carpenter movie.

Anvil of Dawn!! No one on Youtube has the SC-55 soundtrack, so here's the SC-88 version of the best song in the game, which plays during the first area of the game Gryphon's Keep.
As a song it's genius. The game's atmosphere is set right here, after you've selected your character; a sad song for a dead world but there's one last hope—you.

Grimoire has a great soundtrack. Someone managed to extract the MIDI files and play them on an SC-88 apparently. I especially liked this track:

Does Quest for Glory IV count as an RPG? The intro song is amazing whether using a Soundblaster card or (especially) Sound Canvas. The horns are a bit poor but that electric guitar solo!!

What a fucking awesome piece of music. Land of Tempest pt.1 slaps too. And then there's The Edler Tree and Iron Titan. Just gives that awesome nostalgic feeling while also sounding great
I'm playing Vermintide 2 with this on and boy does it set the pacing

And no mention of Ravenloft? Shame on you all.
