I want recommendations of something cool to play, wont even ask for good combat, because not even most of the codex top 10 have decent combat, however i want to play something with those 3 done right.

Examples of itemization i like: Kotor 1, Bg1, Fallout 2 (1 is a bit limited, but cool too), Age of decadence.

Examples of quest design i enjoyed: Fallout 1/2, The witcher 3 (mostly the contracts) and Disco elysium.

Examples of build systems i love: Fallout 1/2, Age of decadence (althought a bit limited) and Underrail.

Preferable if the game doesnt have crafting systems, quests are atleast a bit intertwined with the main tasks and Build systems have satisfying progression instead of "1 point per level" BS.

Bonus points if its a post 2000's game

Have you tried Stygian: Reign of the Old Ones? It fits your criteria including combat not being good, it's also probably still quite bugged.

Kingdom Come: Deliverance:
- brilliant quest design,
- possibility to build your character in several meaningful ways in a classless system,
- decent itemization, you have to go out of your way to break it (though it is certainly possible).

It has some crafting though, at least if you want to save game (there is a mod that allows to save anywhere without a crafted resource).

I already played the living hell of KGD, althought i agree its brilliant in a lot of ways, i found some quests rather restrictive and itemization althought good, has its flaws, specially due to how easy is to break the game's economy once you get even remotely decent at fighting and then buy pretty much every geat youll ever need.

Its a good game tho, solid in a bunch of ways.

Unironicly Fallout: New Vegas. Sawyer's choice to avoid new weapons being strictly better than the ones directly below them and the existence of perks like Grunt/Cowboy and Handloader makes the itemization just work, instead of being a treadmill, by making it so that some builds or playstyles will actually prefer "lower tier" weapons. There is a crafting system, but it's just there to lock access to certain items behind a skill gate (with that skill being one that's not there solely for crafting), let the player "find" items without actually having them laying around, or turn useful items for other builds into useful items for your builds. There's no collecting random junk to get +1% more damage or build an uber sword.

Wiz8, with the caveat that the quests are only decent to good on the main path. The dialogue system and the writing/voice acting is cool tho.

Kenshi. I'd argue that the "quest design" is great, because there aren't any that are designed, but the game world itself if designed to react to what you're doing on your own.

Quest design wants to make me hang myself with a rope

I wanted real quests in the game, never touched kenshi but i know its more of a full sandboxy thing, im more in the vibe for purer rpgs
