Is there any way to disable sleeping everywhere feature?
is it a part of any difficulty and if no, why not?

It's all based on supplies once you're not using the Inns system. Each difficulty setting has a maximum of supplies (6/4/2/2) that you can have at any given time and while you can sometimes find supplies out while adventuring, the availability recharge rate in towns might be an issue if you're not careful (not sure on that really).

Just apply self rules to yourself though and do not use the rest feature outside of Inns or places you find might suit a resting period if you're in the wild. I'm already planning on doing that for the Sash access personally and only use it to store items if I'm in town/stronghold. No need to FORCE everyone to do this, but you can if you want, like resting I guess.

Watching some streamer build a "battle mage", not understanding game mechanics, immediately getting doubts about the viability of his build after running out of spells "given how the game is balanced" is painful and hilarious at the same time. Good thing the game seems to be super easy and forgiving on normal.

All I can say is an honest "cool story bro" however, that group twitch video for the end of kickstarter campaign made me smile.
