Also we were supposed to eventually go to the moon in the original game, I need to know what the hell the devs were smoking.
Journeying to the moon worked well in Final Fantasy IV. :M

I barely started playing this (less than 10h in), but what's the deal with immortal bandits close to first boulder / rock rolling into you? I can kill most, but one of them stays alive. I can bring him down to like 5% of his health, then he turns on something like immortal mode - OHKO on any of his hits, plus I can put 50 arrows in him and he is still running, with his 5% health or maybe even 3%. Is this a way of the game to tell me I shouldn't be there at this point (something like Deathclaws early in Fallout: NV)? I can of course assume he is much higher level than me, but then I would expect his near-immortality to show from the start, not only when he is down to 5% - 10% of his health.

This is all OK of course, I have different area to go, and like surprises like this (like Gothic & Shadowbeast for the first time) - just curious.

Immortality isn't really a thing but the shildbearer is really hard at that level. I'd either avoid them entirely or use one of the few abilities that can break their defense. The one that springs to mind is the Fighter's Skewer.

I remember that the bandits were challenging compared to the goblins etc. before but not unbeatable or something like that. Their stronghold on the other side had some very tough foes I could only kill with pull tactics.

The sword and board Bandits have tons of hyperarmor, and you need to be very careful of when he readies the Charged Stab, it'll fuck you up good. Fighters can block the Stab, which will make his attack bounce and reel, but it'll eat up a good chunk of your Stamina. Striders can roll. Mages can...jump. Early in the game you're better off fighting them like a tough humanoid in Souls / Nioh. You can also have a Fighter Pawn with you so he can put him in a full Nelson - this causes enemies to lose defense. Equipping the Swordsman Ring to change your Blink Strike to Blitz Strike also has enough Stagger Power to send his ass flying, I believe. If you're the Fighter / Mystic Knight, spamming this should pretty much Stun Lock him while keeping yourself mobile so some Thief asshole doesn't Brain Split your dome straight to Hell. There's a field loaded with healing herbs not too far from the bandits, so don't worry about using too many items, you can restock immediately after.

You can also beat them through sheer brute force. Head to the Gentian Shrine, and you can Save Scum for an Eden's Warden - all you need to kill are a few bats, a snake, and like 3 skeletons to reach the chest.

Oh, I can roll as Strider? Didn't know this, thanks. What was funny about this shildbearer (tried him 3 times) - even after my Pawn grabbed him and held for me, twice during the fight, full furry of blows (Strider skill, don't remember name) plus really intense beating didn't hurt him didn't much. It was almost funny to watch, as the guy was left totally open to attacks and it didn't mean much to him. It seems that level / defence / etc are extremely important in this game.

But, changing from mage to strider seems like a good decision - much more fun to play. I was putting this game off for a very long time, and needed a strong motivation (in this case - boring Honest Hearts DLC in New Vegas) to finally start playing it properly.

One more thing I wanted to ask - is it OK to just explore whatever I want / like, or is it better to follow wherever quests direct you? In other words, am I missing anything if I explore on my own without following specific quest / route?

If you don't do the quests, you obviously won't see the quest content. But there's nothing "wrong" with exploring around, what a weird question.

In some games you can explore, find something, sell it, and then realize it was needed for quest X.

All chests in Dragon's Dogma respawn. And if you find a Quest Item, a little jingle plays, such as the Wyrmward Perfume.

I believe Salomet's Grimoire is the only chest in the game that doesn't spawn until you accept the appropriate quest.

I would say that exploring around (especially doing side quests like the escorts or the various side quest chains) can make you very overlevelled for the quests, which will make them into trivial tasks where you prance through dungeons massacring everything. Whether that's a bad thing or not is up to you. The game has a lot of content at all power tiers, you're not going to be able to do all of it at the appropriate level in a single play through.

Although Dragon's Dogma is superficially an Open World game, it was reduced to about one-third the size that was initially planned, and the main quest plus a handful of important side quests will take you to every important location. Thus, I'd recommend not doing too much exploring on your own, especially early on. If you're worried about missing content, you can check the Dragon's Dogma wiki starting with Stage 1 to avoid too many spoilers, though it's better for the first playthrough to be blind.

The most important missable things are 1: go straight when exiting the village the first time. You'll miss a merchant if you don't. 2: Escort the woman in the village inn to the encampment when she appears, also a merchant, 3:the quest Lost and Found (find Quina when she goes missing), which has a major part of the story linked to it.

Also I'd recommend doing the quest to find Salomet's Grimoire (A Troublesome Tome) on the first playthrough, as that has consequences in the main quest and on NG+ they're so minor as to be worthless costing you a cool bit.

I'd say the most important missable in DD is the reward from the insufferable merchant quest chain. Also don't forget to make a copy of the Duke's ring and keep the real one for yourself if you're going to be a caster. It reduces casting time if you have it.

Yeah, and if you save Fournival make sure you max out someone else's Affection afterwards, or you're going to be stuck massaging warm baby oil onto his scalp for the rest of your days, instead of a coming home to the glamorous Madeleine, like my first playthrough on PC.

The Wyrmking's Ring also works on your main pawn, and works for the magical skills of the Mystic Knight and Magick Archer vocations.

It works for any pawn, but it's pretty unusual to have more than one mage pawn per party.

Going with 3 Sorcerer pawns is the way to do it if you're playing as a Sorcerer due to spell synching. If you and a pawn are casting the same spell at the same time, you'll both cast it faster, which is really important due to how fucking slow the Sorcerer spells are to weave.

I rolled around as a Magick Archer along with a Warrior main pawn and then two sorcerer pawns for max High Bolide and High Maelstrom. Shit works.
